Description
Paella is Spain's most famous dish, a vibrant and flavorful one-pan rice dish cooked in a wide, shallow pan. This seafood version (Paella de Marisco) is packed with shrimp, mussels, and clams, all cooked with saffron-infused rice. The "socarrat," the crispy, caramelized layer of rice at the bottom of the pan, is considered the most prized part.
A Taste of History
Paella originated in the region of Valencia in eastern Spain. It was originally a farmer's and farm laborer's lunch, cooked over an open fire in the fields and made with whatever was on hand, such as rabbit, snails, and beans. The seafood version developed in the coastal areas. The dish is named after the wide, shallow pan it is cooked in, the "paella."
