Peking Duck

Peking Duck is one of the most famous dishes to come out of Beijing, China. It is celebrated for its incredibly thin, crispy skin, with very little meat. The dish is a multi-day process that involves air-drying the duck to separate the skin from the fat, which results in the perfectly crisp skin when roasted. While a true Peking Duck is a complex restaurant preparation, this simplified recipe gives you a taste of the experience. The duck is traditionally carved and served with thin pancakes, scallions, and hoisin sauce.
